Apple and cinnamon slice

INGREDIENTS

  • 340g pkt golden buttercake cake mix
  • 1 cup (90g) desiccated coconut
  • 125g butter, melted
  • 400g can apple pieces
  • 300g sour cream
  • 1 teaspoon cinnamon sugar

METHOD

  • Step 1
    Preheat the oven to 180°C. Grease a 20cm square cake pan. Line base and the two opposite sides with baking paper, extending the paper 5cm over edge of pan.
  • Step 2
    Combine cake mix, coconut and butter in a medium bowl. Press mixture evenly over base of prepared pan. Cook for 15 minutes, or until lightly browned. Cool slightly.
  • Step 3
    Spread apple evenly over base, then spread sour cream evenly over apple and sprinkle with cinnamon sugar. Cook for further 20 minutes, or until sour cream has set.
  • Step 4
    Cool in pan. Cut the slice into fingers to serve.

ABCD muffins

1 medium apple, peeled, grated (royal gala recommended)
2 ripe bananas, mashed
1/3 cup pitted dried dates, chopped
1/2 cup vegetable oil
3/4 cup milk
1 egg
1/4 cup dessicated coconut
1 1/2 cups self-raising flour
1/2 cup sugar

1. Preheat oven to 180 degrees (160 degrees fan-forced). Grease muffin pan.
2. Place apple, banana, dates, oil, milk and egg into a bowl. Mix until well combined. Add coconut, flour and sugar. Mix gently until just combined (be sure you don't over-mix). Divide mixture evenly into muffin tin. Sprinkle with extra sugar.
3. Bake for 15 to 20 minutes until golden and firm to touch. Stand in pan for 2 minutes. Transfer to a wire rack to cool completely. serve.

5 minute "baked" apple



For 1 baked apple
1 apple
1 tablespoon brown sugar
3/4 tablespoon moist coconut flakes
3/4 tablespoon currants
1/2 tablespoon slivered almonds
1. Mix the brown sugar, coconut flakes, currants and almonds together. Core apple and place in a bowl. Stuff the centre of the apple with the brown sugar mix and cover with cling wrap. Place in microwave for 5 minutes on high. Remove cling wrap carefully (the steam will be hot) and serve with cream.

Cream Caramel Apple Dessert

Ingredients

3 large green apples, peeled and quartered
2 tabs lemon juice
1 cup firmly packed brown sugar
2 tabs flour
1/2  tsp cinnamon
pinch of salt
1x300ml carton of cream

Method

1. Sprinkle apples with lemon juice
2. mix next 4 ingredients and toss apples in this mixture
3. arrange apples in oven proof dish and sprinkle the rest of the brown sugar mixture over them
4. Pour the cream over the apples
5.bake in a moderate oven (180-190C) for 30 minutes
