Pina Colada pops

These sound yummy (and healthy and easy)

1 can pineapple pieces/chunks
1 banana
1 can coconut milk
1/2 tsp vanilla

blend. freeze in individual iceblocks. enjoy.

one could also add liqueur. or passionfruit, or anything else that would fit

Fruity tabbouleh


Fruity Tabbouleh
Ingredients:
  • One mango, diced
  • One cup blueberries, washed
  • One cup red grapes, washed and halved
  • One cup green grapes, washed and halved
  • One cup strawberries, washed and chopped
  • One lemon
  • One cup quinoa
  • Two cups (plus a bit more if needed) apple juice
  • One tablespoon mint leaves, finely chopped
  • Sliced almonds (optional, for garnish)
Directions
Boil one cup quinoa in two cups apple juice, until quinoa is fluffy and cooked. Let quinoa cool. Dice fruit as needed. Halve lemon and squeeze over fruit. Finely chop mint leaves. Combine all ingredients, and chill for one hour. Top with sliced almonds and serve cold.

Cream Caramel Apple Dessert

Ingredients

3 large green apples, peeled and quartered
2 tabs lemon juice
1 cup firmly packed brown sugar
2 tabs flour
1/2  tsp cinnamon
pinch of salt
1x300ml carton of cream

Method

1. Sprinkle apples with lemon juice
2. mix next 4 ingredients and toss apples in this mixture
3. arrange apples in oven proof dish and sprinkle the rest of the brown sugar mixture over them
4. Pour the cream over the apples
5.bake in a moderate oven (180-190C) for 30 minutes
